One side effect of my cancer treatment was that I lost my appetite and couldn't keep my weight up. So one of the best things about my trip to Spain this summer was learning to love eating food again. Spanish people love to cook and eat traditional foods like gazpacho, paella and calamari (just don't call it seafood with legs). And that's why they live longer healthier and even happier lives.

 I'm fighting fit now, and I feel great even though I've only gained 4lbs. Eating the Mediterranean way has done wonders for my health, and I hope it will do wonders for The Skanner readers.
